So, here’s me. Little miss ambitious, yet, new to the world of cooking-by-scratch, making my own pesto sauce. I’d just like to thank Jordan for pretending it was decent as a pasta sauce, then later adapting it’s purpose to be a sandwich spread.
The story goes:
Mia decides she can make pesto all by herself (because I’m a taurus and we’re stubborn like that) but cheats a bit and looks at some of the things you normally put in a pesto sauce.
Jordan and I run down to the market and pick up what wasn’t already conveniently waiting for use in his cupboard.
Deciding against all measurement recommendations, Mia throws a bunch of ingredients into the food processor.
Ingredients
Prep: 5 Minutes
Makes: 2 Servings
2/3 cup Pine Nuts
2 cups of Basil (wish we had been able to grab fresh stuff!)
A dash (or eight?) of lemon
A dash of Sea Salt and a dash of Pepper
2 medium-sized Garlic cloves
Red Pepper flakes for kick
Olive oil
Grated Parmesan cheese
Jordan’s excellent photography does this dish more justice than it deserves, but I’ll give myself the opportunity to try a true pesto sauce once more.
Ok ok, it wasn’t that bad, it just didn’t taste much like a sauce for pasta.
